Strawberry Rice Krispie Treats

On a recent hot weekend in New York City, my friend Amelia hosted her fantastic annual strawberry shortcake party. While she was brave enough to turn on her oven to bake over 100 shortcakes, my contribution to the party was strawberry rice krispie treats. This recipe only requires a few minutes of standing over the stove, perfect for these hot summer weekends.

Rice Krispie treats are simple, making them a fun template for adding additional flavors and toppings. Start by making strawberry butter with a stick of butter and freeze-dried strawberries. Then, combine that with melted marshmallows, which are also flavored with strawberry powder. Decorate the rice crispies with whole slices of freeze-dried strawberries—or don’t!

Ingredients:

Strawberry Butter:
1 stick (8 Tbsp) butter, room temperature
1 23g bag of freeze-dried strawberries, divided

Rice Crispy Treats:
1 10oz bag marshmallows
¼ tsp sea salt
6 cups Rice Krispies cereal
12 grams freeze-dried strawberries, picking out whole pieces for decoration

How To:
1. Make the strawberry butter by grinding half (about 12 grams) freeze-dried strawberries in a food processor into a fine powder. Once the butter is softened, place it in a medium-sized bowl and fold in the strawberry powder until well incorporated. The butter should be bright pink. Scoop the butter onto a sheet of parchment paper, roll it into a cylinder, and refrigerate for at least an hour or overnight. The butter itself will last up to 6 weeks.

2. Coat a 9 x 13 or 8 x 8 pan with butter or baking spray.

3. In a large pot, melt the butter over medium-low. Once melted, add the marshmallows, the remaining freeze-dried strawberries, and sea salt. Stir with a silicone spatula until all the marshmallows are melted and the mixture is smooth. Take off the heat and thoroughly mix in the Rice Krispies cereal. Transfer and gently spread the mix to the prepared baking pan in one even layer. Let cool before cutting into squares.
